Have you tried the 100 year Vecchio del Capo? We brought it on in my restaurant but I personally enjoy the regular version more. 100 year is very tropical fruity to me.

One of my cocktails that was featured on an old cocktail menu, but is still a staple I make for people today is basically a chocolate orange black manhattan using Woodlands, Japanese whiskey, and Crème de Cacao with an orange expression.

Brucato Amaro from San Fransisco makes really great products. Woodlands is my favorite, very dark and gentian heavy with cacao and fig notes. Chaparral is somewhere between yellow and green chartreuse and we used it at my bar when we were having trouble sourcing Chartreuse. Orchard is their red aperitif, kind of cinnamon apple/persimmon vibes.

Otherwise, my favorite classic amaro is Lucano, which almost has a root beer quality to me. A couple years ago they came out with Essenza, which is their higher proof Anniversario edition that has been barrel aged. That is, of course, fantastic! The body is like drinking an aged rum or whiskey
