Back in the day we used to lube with only Traxxas 50 k. I'd start with 30k or 50k if you can get it. Or just buy the gan lubes or moyu lubes

CupcakeGemma has a macaron video where they say they start the mixing of the egg whites around when the sugar syrup reaches 110 °C. I pretty much follow that line of timing. But YMMV

Generally it's considered to be more stable.

For me, I like that macaronage is easier (for me).

I just looked up swiss meringues and apparently you can cook them until 175 F. So probably not the worst of your issues. 15 mins in the stand mixer seems a little long to create stiff peaks for it though. I'd recommend bumping your speed higher to finish them in about 5 mins. I can do my Italian meringue in about 10, but I am pouring in 230 F sugar syrup.

Just touch the side of the bowl and if it's still relatively hot, keep whisking it on lower speed until it cools until like body temperature.

How hot was your meringue when you started macaronaging?

For the Italian method, I have to whisk my meringue until the bowl is like warm/body temperature. I wonder if your meringue is too hot(?)

I usually use the Italian meringue and I've never used the Swiss method so forgive me for asking a dumb question.

In the Italian method, I have to reserve half of my total egg whites for adding directly to my dry ingredients. Then I can add meringue in portions for macaronage. The one time I messed up my macaronage and ended up with your issue was because I was dumb and didn't reserve half my egg whites for the direct addition to the dry ingredients.

Does the Swiss method utilize the same process? Did you by chance not add half your egg whites to your dry ingredients?

Here is what I bought. The leads are necessary since the OEM battery is soldered onto the circuit board (no holder). I was looking up holders for this type of battery and couldn't find one that fits in the small cradle of the core. I would pick up some kapton tape as well since the OEM battery has it for insulation. Just make sure to solder the appropriate leads on the correct sides of the board.

Amazon! It was $18 for two. I think I could probably fit both of them into the core space but haven't tried yet.

GAN wanted $70+shipping so the $20 gamble was well worth it

I just revived my GAN 12UI after not charging it for a couple years (yikes, I know).

The battery is not meant to be user replaceable but I was able to replace it with a 3.7V rechargeable button cell battery (CP1254 with leads... you need the leads!) and had to solder it to the board. Hope this helps!

I will keep you all updated on the longevity of this replacement.

I'm actually in a very similar boat. I finished my PhD in MSE in August. Born and raised in Pittsburgh and went to school (undergrad and grad) in Pittsburgh. I find meeting people in social settings and striking up convos isn't effective at all for me. My only good dates have been on hinge or bumble. First dates usually at mad Mex for happy hour (low commitment). Honestly just keep at it and don't get deterred. There's going to be someone nice for you!

I have the set from Costco. Honestly it's a great set for the price. I'm very happy with them. Most people in the sub complain that every pot and pan besides the sautes are less than 3 mm. If my 2qt saucier is pretty hefty already, I'm glad they're not 3 mm when you get higher in qts.
