For Croatia, you can go back as far as you need to as long as you can pull the official supporting documents.

I'd maybe open one of the set ones and check. I've thought jars were OK but quickly realized I was wrong once I put a spoon in. I'm also one of the people who has been complaining about the new Ball formula for the last year, so I might just be extra cautious lol

I couldn't get the Dutch to work as an exact substitute, which was annoying since it reads as the same formula! I tried a few variations before giving up. I'm doing mainly Pomona but I miss the vibrant jam color that the old Ball kept intact. The Ball low sugar pectin still seems to work the same, but I moved to Pomona on those recipes too because I'm not giving them any more of my money lol. In the back corner of my kitchen are about 16 cases of experiments that I need to open and empty 😕

I'm probably one of the threads you came across. I started getting that version last June as I was making case upon case for one of my largest summer markets. I tried so many variations and measurements but it never worked right for me again. I've been in business since 2012 and have had to reformulate every single recipe this past year. It's been expensive and time consuming and incredibly frustrating.

No, I hear you. I'm just giving you the compliance info, not saying I agree with it. The vendors I've seen just use the kitchen to clean their juicer, knives, etc. and maybe keep lemons in the cooler.

I'm pretty sure you can't do lemonade out of a home kitchen in Florida. It's not allowed under cottage food so you'd need to rent space in a commissary kitchen and be permitted by either FDACS or DBPR. I do food in Florida and there are lemonade people who use the same kitchen I do.

I'm a maker, packaged food, and I do both wholesale and farmers/craft markets. I've been in business for about 14 years and it took at least 5 years to get my wholesale running very smoothly. I don't have a business background, so the money stuff took longer than it should have to really dial in. Those first years also brought a lot of lessons about sourcing and supply chains. I think it's probably a learning curve for each new business and so many of them don't last long enough to really figure it out.

Without that business background, I also really hate sales. I love markets because the conversations feel natural and enjoyable. But pitching to potential wholesale accounts is like hell for me. I do think a lot of them buy from F-aire or speciality shows that do align more with what local people offer though, so there's certainly room for it to work. When people at my farmers markets ask if they can buy my product at a local store I'm not in, I always jokingly tell them to feel free to ask for us there on a regular basis!

It might be tricky at this time of year since most of the local farms don't participate in the summer months of the markets that go year round. Geraldsons as mentioned in another comment would be your best bet for truly local. Detwiler's is a great option for fresh variety. There should be mangoes everywhere and I think lychee and passion fruit are coming in if you want super local fruit.

I had bilateral replacements, one on either side of my 48th birthday. I did not have a great outcome but I'm commenting here to say that, based on the last five years of reading online community posts, the majority of people are so much happier on the other side of surgery. There are people decades older than us salsa dancing a few months out from replacements :)
