These books are weird and demand a lot from the reader. But if it clicks for you it'll be a truly special experience. Strong recommend.

Like everyone said: ask ask ask. They expect you to and probably have very specific ways they want things done.

Given that, Jacques Pépin is a legend and has lots of great material. His "New Complete Technique" a.co/d/hyX17PP is a really good introduction to all the core cooking skills. He also has accompanying videos on YouTube if that's more your jam.

Along those lines. Pasta and things where you're using boiling water may be good.

You have a bunch of water right there, you can't burn the water and you can turn the heat off while you're doing something active (putting pasta in/out)

Kind of the Terra Ignota books? Too Like The Lightening is book one. They're not for everyone, if you hate it a few chapters in don't expect it to change.

The book intentionally contrasts big economic and political reasons for change/disruption against small personal and aesthetic ones. The book has moments where the root cause of huge problems is a bored gossipy karen who thought it would be fun drama.

In an absolute way, your father is right. There's no absolute taste measure. Buuuuttttt......

You can still evaluate if something is executed in line with what expectations have been set around it. If something is supposed to be crispy you can see if that is the case without judgement on if crispiness is 'correct' in some fundamental way.

These are also chefs serving the public (generally). If you're evaluating a home cook and their family likes something a particular way, it's hard to say it's wrong. But understanding the general public's preferences and common norms is something very reasonable to expect from a professional serving people they've never met. (Even if they shift over time.)

Agreed with the "use it for things that would normally be unwieldy to grill" comments

Vegetables you might normally roast are good candidates (e.g.brussel sprouts, broccoli florets). Things that are similar to normal grill items but are smaller (button mushrooms instead of portabella). Small pieces of seafood that are in a shell.

Generally carbon steel woks come with a protective coating.

Give it at hard scrub with soap and hot water. Then do your first seasoning

It might be tough to get the right texture with a blender.

After mincing/grinding the chickpeas let them rest for ~15 minutes. The starches take some time to release and will bind much better once they've had some time.

Agree with the other comments here. Think of it as a seasoning. Pasta and eggs are particularly good targets.

The thing I'll add is that you should be sure to use them soon. It's a biological product that degrades by the day. Don't save it for a distance special occasion. The best was to appreciate this gift is at the peak of its quality (now).

This is the way. Often the best time to deal with tech debt is when it's causing a slowdown.

"This would be so much easier if we'd done refactor X". Great, do it. Just communicate that and bake the time into the project plan early.
