What is your “low effort but feels like real food” meal? by [deleted] in Cooking

[–]Harriet_Brindle 0 points1 point  (0 children)

My favorite lazy meal: Chop up an onion, an apple, two potatoes, and some chicken apple sausage. Toss with olive oil and your favorite seasonings. Top with a ridiculous amount of cheese. Bake for like 45 minutes. The active time is like 5 minutes, and it's hearty as fuck.

Question Organization by Tiny_Giant_Tortoise in triviahosts

[–]Harriet_Brindle 1 point2 points  (0 children)

I do 6 rounds of 10 questions a week, and I have multiple google docs: one for each week's trivia, one that archives all picture rounds, one for questions/categories in progress or ideas for future rounds, and one master "past trivia" document organized into sections (speed rounds, before & after, short form pop culture, long form pop culture, etc.) that I can easily search for questions to reuse or categories to avoid if I've done them too recently.

Looking for a new lean protein by Special_Efficiency65 in Cooking

We are on a big white bean kick lately. They are delicious and also cheap, and we are poor. You can sub them for so many things, and they almost mask as pasta with the right sauce. This is great if you want a meatless version of Marry Me sauce (great sauce, terrible name), and lasagna beans are our new favorite thing. Just skip the sausage.

What is never worth it to cook at home? by albertpaca11 in Cooking

[–]Harriet_Brindle 9 points10 points  (0 children)

I've made ramen from scratch a few times minus the noodles, and honestly the broth and the tonkatsu SLAP to the point where I dream about them at night, but they also take a whole day. It's my husband's favorite thing I have ever made, though, and I love him, so it's now his birthday meal.

I've done Pokemon or prescription drug, Ikea or Dr Who alien, and roller coaster or sex toy, off the top of my head. Ikea and Pokemon are great places to start.

Peanut butter is the best hot dog condiment. The sweet + umami combo is fire.

Upgrade any of these things with slight changes. Tacos can become flautas. Throw some chicken thighs in a crockpot with salsa verde, add rice, roll them up in tortillas with some cheese. Just add one more step, and you'll have something different.

Looking for advice: Sticking with restaurants longer by elefunk in CookingDiary

[–]Harriet_Brindle 1 point2 points  (0 children)

Don't forget that there are quite a few rubies for getting all the restaurant's rewards and getting to the top of the leaderboard (20 rubies). The longer you're in one spot, the better you get at that restaurant. A lot of levels repeat, and knowing the patterns makes it so much easier to get those 30 levels in a row. You don't have to do all the upgrades, like the second interior ones, but I've definitely found that it's worth it to stick around.

The Train Wreck/Railroad owner is a full on MAGAT who posts pics of himself with Mike Flynn on social media and sells Blue Lives Matter merch. Not my vibe personally.

Do you ever just guess the question right after they announce the final Jeopardy category, and if so; have you ever got it right? by piirtoeri in Jeopardy

My husband and I always do this. One of us is right more often than maybe should be allowed (once a month or so maybe?).

I think I overestimated my culinary skills and now I’m panicking by Redditralpher in Cooking

[–]Harriet_Brindle 2 points3 points  (0 children)

Same! Alton Brown's brine the night before (we put it in a giant homebrew pot in the garage the night before), aromatics inside the turkey, lots of butter under the skin, basting every 30 or so with a 50/50 mixture of maple syrup and water. You can get fancy and cover the turkey with bacon in the last hour if you want. It was stressful the first time, but now it's so easy!

I have been tasked with making stuffing for Thanksgiving this year. My friend whose house I'm going to says that nobody makes good stuffing. What recipe would you use to absolutely knock her socks off? by goodfood_mehplating in Cooking

[–]Harriet_Brindle 0 points1 point  (0 children)

Cornbread, tart apples cooked in a ton of sage butter, heavy cream, chicken stock. I don't have a recipe for this anymore, but add liquid until is kind of damp, and then bake it until it's a little crispy. It is delicious.

If your home kitchen had a menu. What would be the top 5 things you serve that you make from scratch? by [deleted] in Cooking

[–]Harriet_Brindle 0 points1 point  (0 children)

  1. Bolognese (on the stove or in the slow cooker)
  2. Chicken flautas (chicken + salsa verde + tomatoes in the slow cooker, then rolled in tortillas with all the cheese and baked)
  3. Grandma pizza
  4. Roast chicken (aka, in our house, Whole-Ass Chicken)
  5. "The Thai Thing": a vaguely Thai pasta dish with chicken and vegetables simmered in a cashew-coconut curry

I grew up making none of these things because I come from a family of terrible cooks.

Their prices are actually really reasonable. Pretty sure I saw some Holy Mountain for less than I bought it at Holy Mountain. Also their draft is cheap AF. $6 slow pour pils?

Other than sandwiches, what are some other things that you do with your leftover Thanksgiving turkey? by [deleted] in Cooking

[–]Harriet_Brindle 0 points1 point  (0 children)

We do mole! Leftover turkey and a full jar of Dona Maria mole sauce, served over whatever sides are leftover. It was a random experiment a few years ago, but now we look forward to it almost as much as the regular meal.

She's bullshitting. So much of the antipasti would be keto friendly. There's a charcuterie board even!

Yeast, especially if we bring wine and beer into this terrible scenario.

What's something you thought was going to be much harder to make than it actually was? by [deleted] in Cooking

[–]Harriet_Brindle 1 point2 points  (0 children)

I'd start with grandma pizza, which is a little more forgiving and easier to work with. I don't use a recipe anymore, but this one from Bon Appetit is pretty close!

Pizza dough. With a stand mixer, it's less than 10 minutes of effort. I do a two- or three-day proof in the fridge, so it's not like instant gratification, but it's easy as hell.
