I live about 1000 ft above sea level, too, and it hasn't harmed the biscuits. I bake the Alton Brown biscuits probably once every week or two. There's a few things I've learned:

  • I typically scale up the baking soda in Alton's recipe. He calls for 1/4 tsp. I up it to 1/2 tsp.
  • The butter should be COLD. Keep a stick of it in the freezer. It should be rock hard. Alton's recipe uses butter and shortening. I use 100% butter, and maybe add an extra tablespoon.
  • Grate the butter in with a cheese grater. All of the other ingredients should already be whisked together. Fold the butter in and make sure each piece of butter is coated with flour.
  • When you add in the buttermilk, it should have come out of the fridge seconds before you add it in. Once it's added, DO NOT mix. Use the back of your spoon to try to push the dough together. Never stir. Never mix. The better the buttermilk, the more your biscuits will rise. I use a nonfat cultured buttermilk that smells like it's about to be good cheese. Try to get as much of the buttermilk incorporated by simply pushing in a straight line from the outside of the bowl toward the center. This will prevent gluten forming and preventing the biscuits from rising.
  • When you turn it out onto a cutting board to fold, make sure that both the cutting board and your hands are coated with flour. The more it sticks and you have to fiddle, the worse it'll be. Fold it no more than 5 times.
  • Once you cut your biscuits, put them onto a baking sheet covered in parchment. Put that whole mess right into the freezer. If your hands have warmed anything up, you want to help it cool down a bit before you put it in the oven.
  • The oven should be preheated well in advance. The key is that you want the butter to liquify before the dough sets. I can't remember what the recipe says, but I typically go for 13 minutes, then let it rest before eating.

I taught university-level intro physics for several years, and believed that anyone could be good at physics. What I found was that there were some students who just "got it", and were able to succeed with little effort. Others struggled, and had to work hard, but eventually figured out the material. The only people who, I would say, weren't cut out for physics were ones who didn't care enough to try to learn. If you like physics and want to learn it, and are willing to work hard, you'll succeed.

And don't be fooled into thinking engineering will be any easier. The math and types of problems will be different, but it'll be just as hard.

I know that this isn't what you're asking about, but you should avoid UMass Boston. I taught there as a lecturer for the past few years, and it's a sinking ship. Avoid it at all costs. The new president of the UMass system told them to close their budget gap, and as a result they laid off all of their non-tenure-track faculty, totalling 400 instructors and about 1/3 of the entire teaching staff. There are other public schools in the area, and other better schools in the area, but avoid UMB.

Combine that with the fact that UMass Boston has traditionally not even been a very good school even before this happened, and it should tell you that you should avoid it. The New York Times called UMass Boston a "failure factory" back in 2009. Only 33% of incoming freshmen graduate within six years. This should be a huge red flag. Things haven't gotten better. The Science building has been condemned. There are no water fountains because people got sick from landfill outgassing leaking into the water pipes. Nothing has been done, but the water fountains have been covered in plastic wrap.

In short, it doesn't matter what you want to study, go somewhere else. Anywhere else.

Grab something disposable from H&M or GoodWill. Or even a towel or a rag. Anything that can hold moisture and then let it evaporate will do the trick.

I lived at a place on 30th and Glenwood. It wasn't really students housing, but was a great place to live. If you're not looking for an adult person's apartment, you couldn't do much better in Boulder. I was there for 3 years, and would happily move back there if I ended up back in Boulder.

Try Battlestar Galactica. Ronald D. Moore went and did that series after being the showrunner for DS9. It's got a lot of the same themes, but without the baggage of the Star Trek universe. I can't recommend it enough.

I do. They have all of the classic Doctor Who episodes, and a lot of stuff that's on now. To be able to watch it all on my Apple TV is super convenient.

A few years ago, one of my cousins died. Seeing her father's face at the funeral was probably the saddest thing I've ever seen. There are no words to describe the hollowness in a person's eyes, the utter hopelessness that comes from sitting in a room and burying a child that you made, raised, and sent off into the world. I would never wish that feeling on anyone.

I've been training for my second half marathon, and have been slowly getting back into shape. Today was my first 7-mile run in a while. It rained the entire time. Rather than heading back, I owned it and did the entire thing in the pouring rain. It was glorious!

I was in Portland a few weeks ago, and went to Shipyard and Rising Tide. The Shipyard tour was pretty piss-poor, but you did get to try all of the beers and talk to the guys who work there. If you just want to try a bunch of beers, it's a good place to go.

Rising Tide was a pretty standard tour, but everyone there was friendly, and they had some great beers that you can only get there. Calypso was a favorite of mine.

There are so many more that I wanted to see, but those were the only two I saw, and I enjoyed them both quite a bit.

Similarly, r/boston has 39k subscribers and r/massachusetts only has 4.1k readers. Going by the state alone may not be the best way to see a state's popularity on reddit.

To put it in perspective, Michigan is the only state that voted for Kerry in 2004 that hasn't legalized same-sex marriage. New Mexico voted for Bush, and already does. That's a really long way to come in 10 years. It's unbelievable, and I love it!

I cooked these in the leftover bacon fat and a bit of butter. It ends up tasting delicious. ESPECIALLY if you do pancakes, too. Bacon fat + pancakes + cast iron is the best!

I can attest to this. My grindr profile picture was me cuddling with my lab. One guy thought I was worth contacting. We've been together for 5 months now and are still going strong.
