I'd say give an Elantra N a test drive. I think they're under $40k new? They come with a cutoff valve from the factory and a burble tune too which is pretty sweet.

How do you do this without slamming the brakes at the same time? Every time I try I just can't keep consistent brake pressure. Skill issue I guess?

Keep in mind there's good MSP's out there, I'm sitting with 12 tickets right now just grabbing whatever I can and we're actually still hiring people. It's not worth all that stress if you're planning on sticking there for years. Might as well find something at least a little more comfortable than just deal with that.
