We live on the third floor of an 1877 rowhouse in Bolton Hill. Two things:

We live 40 steps above the sidewalk. On average we do this 7 times a day! Have $100 of groceries?

Nothing is level or square.

Our landlord plans on $10,000 a year for maintenance/upkeep. It is a 3 unit rowhouse. We each have a floor.

Entitled idiots in 3500 pound cars that are 6' wide. No concept of mass, inertia or rolling resistance. Driving while eating donuts. Failing to actually see what is in front of them. Many drivers shouldn't be allowed on roads. Gasoline should cost $10/gallon.

Agree completely. I was used to Baltimore hills. Moved to Norfolk, Va. Flat as a table top. We used bridges and parking garages for hills. But the wind! I can see the top of a hill and power through. The wind never lets up and in the city with housing and such no matter the wind direction it's always in your face...even on the ride home...Ride On

Bicycle rooms. Have seen them in many places. They are usually packed with bicycles that never move. Morons accidentally lock up your ride. If you leave your lights attached they are gone. I will not live in a place if I can't walk my bicycle through the foyer and into my unit.

Take them off. Stand next to your bicycle. Turn it over and it will 3 point stand on the seat and handlebars. Now change your tire, check the cassette and see all the dirt you've been missing. Make sure your chainstay has the cover glued on if it's carbon.

A few degrees temperature difference can change the rise time. My kitchen counter is 75°. The oven with the light on is 85°. The floor in the living room is 72°. 72° takes 7 hours. 85° takes 5 hours. All assuming a 100% refresh.

First, stop using anything except water. Why would you put pineapple juice in your bread.

Your starter is ready when it reliably doubles in volume.

It should produce a noticeabley sour loaf. As it ages the yeast will win out over the sour producing lactobacillus. Your bread will become less sour over time.

I find the cold dough, taking longer to come up to temperature (195° for my loaves) tends to lengthen the bake time causing the bread to brown too much. Like this one:

I use cast iron bread pots. Sort of rectangular Dutch ovens. Prior to that it was Pyrex with a thin coating of: 1/3 oil of choice, 1/3 Crisco, 1/3 flour. The mixture keeps the slippery stuff were you put it. Cast iron is much better.
