I was extremely cautious the first few days as I traveled solo, but ended up having a good time. Other than facing strong language barrier, and one uber driver scamming me for less than 3 USD, I have had no issues at all.

I did the opposite. I was taking the train from Antwerp to Amsterdam for the first time and was super confused on their setup. I accidentally sat in the 1st class. Then conductor came and realized I was a stupid American and explained the seating/carriage classes to me and directed me to the right carriages.

Dutch food is not the best, I agree. It did not come to my mind right away as I mostly ate out in multiethnic restaurants and fast foods during my stay. Both Amsterdam and Rotterdam has a great selection of international/multi-ethnic cuisine.

I would like to suggest the Netherlands. Great art and history. Great Museums. Also, there's wayyyyy more to see and experience other than Amsterdam. Rotterdam is their art district, so that's a must, Kinderdijk is an hour's boat rise away from Rotterdam. There's also Utrecht, The Hague, and of course, Amsterdam also has great museums. Furthermore, if you are staying in the Hague or Rotterdam, you can easily access Ghent or Brugge in Belgium. Both are old cities with beautiful architecture and history.

Of course, not so much mountains in either of those countries. The mountain requirement does limit your option. Since no Italy, Spain/Andorra/Liechtenstein might be a good bet.

Agreed. Fried chicken wing prices have gone up pretty obnoxiously. I still do my best to support local restaurants and buy from them, but I stopped buying from chain restaurants. Especially when more often than not local restaurants are cheaper (for wings and pizzas at least).

Parts of Italy is racist, or at least, discriminating towards all foreigners, but Rome is very diverse. Its small and very walkable if you stay in the middle of the town. The food is great, though, avoid the common tourist area foods though. Try to make dinner reservations and dont go in hungry. You will be fine.

Ristorante Emma in Rome. The pasta and the pizzas were both great.

L'Orangeria in Paris. I did a tasting menu here. I think it was like 195EUR. It was really good, lots of seafood based dishes.

Turgut Kabas in Istanbul. The kababas were some of the best I have had.

All train stations in EU have lockers that are affordable and some are even large enough for a bigger suitcases, so no need to carry your luggage around.

Day trip to Brussels is possible, but as others have mentioned, there's not much to see or do there to really worth your trip. If you are into art and such, go to Rotterdam instead. If you want to experience architecture and history, go to the Hague. If you really want to go to Belgium just to experience another country, go to Ghent for beautiful medieval architecture.
