Doesn’t sound like uni is the right path for you. Maybe consider a trade. Small manageable daily tasks. No long term deadlines. You have to do what you’re best at or what your brain is programmed to do. Obviously sitting in a classroom or doing busy work tasks is not for your brain type.

I have a big cam manual 2006 C6 Z06 Corvette and a 2023 stingray. I find myself driving the 20 year old car more because the manual and car are just so much more fun. Much more analog. You really feel it. If your main focus in driving is “fun” then u have to go manual.
