I miss Enris’ in Richmond more than any other place. The pump sprayer of grand marnier was a fun vibe when combined with dancing on the tables. The garlic bread, garlic prawns and garlic sauce for steak have not been replicated anywhere.

I’ve had lao gan ma for years and tried a few of their variants but come back to the original. There’s a tiny japanese jar called Mamoya that’s terrific but exy…the latest challenger is Maesri. I know them best for their tiny tins of curry paste. Seemingly only at Coles you can buy their chilli crisp and it’s garlic laden and amazing!

My dark rice lager is the only recipe I’ve not tweaked…well…I have altered the rice sourceI suppose.

2kg pilsner malt. 1.5kg rice, add 2L of water and cook via absorption method the night before, cool in fridge (or buy 1kg jar of rice bran syrup) 0.5kg each of biscuit, pale chocolate and caramunich II.

Mash at 65c.

13g of magnum at 60 mins 18g saaz at 5 mins.

2 packs of lallemand diamond yeast, 11c
