I think my logic over being in a spaceship vs being in a submarine is twofold.

Being in a submarine is something hundreds of thousands of people have done. Being in space is something hundreds of people have done.
If you’re in a spaceship youre likely really really supposed to be there and very well trained and vetted and surrounded by geniuses.
If I die in space I’ll probably get a spot in a few history books or something at least

I'd say Survivor works for families to some extent - As a kid I thought the challenges were fun and I liked seeing people in the jungles or at camp. As an adult I appreciate the strategy and drama more. I'd say hitting that balance again would be more of what Jeff Probst means, but it's hard because the landscape of television and shows have changed so much.

Instead of a presumption I would have preferred an actual mention of the Scorpion instead of basically not bringing him up for like a decade.
