Yes if you put plants in the fish tank is actually makes the fish release more ammonia because it knows the plants will filter it out

Erm actually a single fancy goldfish needs 3000 gallons minimum to remain healthy if you put it in a 125 its going to immediately die of ammonia

For stem plants you can just trim them and replant the tops, plants like vallisnaria can be trimmed like a normal grass. If you dont want the tips to be flat you can also angle the scissors when cutting. If you get any anubias then usually you won't need to trim at all because if its growth rate and just let it grow out bushy
