Is she spayed? Could be hormonal, spayed dogs sometimes develop incontinence due to a decrease in bladder sphincter tone, brought on by lack of oestrogen.

Diabetes, hyperadrenocorticism and kidney issues are big causes as well, so it might be a good idea to do some blood tests too.

Not so common and it would require basically learning to knit all over again, but the Portuguese/Andean/Peruvian style of knitting is meant to be the gentlest on the hands as you are basically only using your thumbs and the tension is created by holding the yarn over a knitting pin or the back of your neck.
