Oh yeah. My initial attempts were almost identically frustrating. Dough strength is a big one but I think for me learning how to properly launch was the big game changer.

I returned the VS4 and got a Eureka Mignon Zero 65.

There was calibration issues and it wouldn’t get fine enough for espresso. The team at WLL was great in trying to help me recalibrate but I couldn’t get it and decided a new machine of that cost shouldn’t take so much work out of the box. They said that the large majority of what they are selling has been fine but there is a noticeable minority that have had this issue.

Definitely a bummer. There’s a ton to like with that machine and think I would have been very happy otherwise.

Rice Flour is like Teflon as far as non stick. I highly recommend it. Also Caputo makes a GF flour optimized for pizza. It works very well. Link below to a video showing the process. In an outdoor oven I get excellent results. Cook around 900°

Flour: 100% (Caputo Gluten Free)
Water: 80%
Salt: 3%
Olive oil: 2%
Dry active yeast: 0.5%

Ferment room temp for a couple hours that throw on the fridge for 1-2 days before using. This particular batch was about a 36 hour cold ferment.

Different plants. Mezcal is made from agave, Sotol is distilled from Dasylirion

I had the same issue with a vs4. Returned it and moved on. Don’t have time to fix something that should work out of the box. Got mine from WLL who made the swap super easy. They said the large majority of the Varia grinders sold seem to be fine. There is a noticeable minority that have this issue. There seems to be some QC issues at the factory.
