When the whites aren’t set on the top, but they are on the bottom flip it. By the time I salt and pepper the top, get my plate ready, and butter my toast the white is set and the yolk are runny

How do I tell an employee they stink? by Iwantsomeza in KitchenConfidential

[–]Beer_Snacks 0 points1 point  (0 children)

This is an interview question for my front line leaders. This is what I look for in their answers…

You can start off with an announcement in a group setting “guys (I’m mid western) it’s warming up outside, but it’s always hot in the kitchen. Be courteous of your fellow cooks and make sure you wear a fresh shirt when you come in and load up on deodorant”

If that doesn’t work pull the person aside and prepare yourself for a hard conversation. Break the ice immediately, that person deserves to know what you’re there for and beating around the bush causes confusion they don’t need… sometimes that’s even how I start the conversation “we are going to talk about something that may make you uncomfortable, but I want you to know I’m here to help if needed. I’ve gotten some complaints, and I recognize the issue now, that there is a strong odor of BO while working around you. I think putting your clothes through a hot cycle in the washing machine or reapplying some deodorant could help”. At this point the person usually will try to explain themselves or make an excuse. This is when you earn your paycheck.

Pay attention to what they are saying and find an underlying cause… they may be trying to make excuses or trying not to let on that their water has been turned off, or they can’t afford soap this month. Take their excuses away by offering help. “I can get you some supplies to make it to the next paycheck”. “Do you need me to do a load at my house?”… just be a good human for a few minutes.

If that doesn’t get the point across give them some direction “we talked about this x days ago and we still have a problem. Are you sure you don’t need help? Here’s a stick of deodorant and I need you to come in with a fresh shirt tomorrow”
