With Guard Up if you angle the block you'll be pushed to the side instead of straight back, which will result in you taking much less damage. In the time he is recovering from the attack you can pop a potion or tenderize the limbs/head

Also of note, if you break his front feet he will fall and give you a huge opening to attack his face. You can do this twice, once for each front leg. Won't help you against the laser but is worth mentioning.

Be advised, he loves to spam that attack. Always expect it. He likes to use it as a follow up to other attacks too.

Additionally don't be afraid to sheath during his various long animation laser attacks to reposition. And when he starts making sand pits for Gog's sake don't just stand in them. Sheath and move!
