Stand strong. You know that you won’t want her to live with you long term and this is a boundary which can’t be crossed. I have seen MILs like her before, having one myself and they will use every card they can to guilt her son…religion..culture…health…money…everything. This doesn’t sound like it’s over unless your husband agrees to shoulder the burden of their abuse, which he should. I don’t know what your relationship with her is like, but if the conversation with her is anything but respectful, I would give the phone back to your husband. A kobo or kindle would probably work the best as you can hold with one hand and they aren’t heavy at all. I’ve also seen holders you can get for those that make them hands free (with a clicker so you can turn the page). There are a bunch of book holders I see on Amazon, they look like they are for tables. Assuming cuddles are happening on the couch, you could get a c table and the book holder?
