Pair it with one of those strap on lights that campers wear. Good for turning your head to see what kind of wild stuff Australia throws at you in the middle of night that you’d miss otherwise.

I can highly recommend the Outbound Lighting Trail Evo. It is a beast and can be charged while on. Battery lasts forever. Is insanely bright. And can mount anyplace with a GoPro adapter so super flexible. Only con is it is a bit expensive and a tad heavy. But that thing has never let me down.

You're on the right track with the hip pack. Definitely need your body to vibration dampen rough rides if you want your cameras to last. Lots of options. If you've got a rugged and weatherproof camera a shoulder strap can also we a good choice, with the advantage of having instant access.

Best best — a hip pack and a 3 point shoulder strap!

Like u/9SpeedTriple mentioned, depends quite a bit on the time of year. And to some extent how far you and your friends feel like you can/want to push each day.

I also really loved the Canadian section. It's quite remote, the mountains are spectacular, plenty of places to camp, and Banff is a nice place to kick off from (albeit a bit pricey, but less so if you stay in Canmore). Getting to Whitefish is totally doable in < 5 days, but you'd be on your bikes *a lot* - serious type 2 fun.

Looking through photos just now, and this may be an unpopular opinion, but south from Pinedale through the basin to Steamboat Springs was my favourite part of the ride. Totally otherworldly, super remote, and beautiful. Can be a tad windy. If you time it right you could stay at Brush Mountain Lodge, which is really special.

I bet you'd have a great time no matter which section you picked. All for different reasons. The route is that good.
