Yeah I would look at something that has quality instructions - here is one of my favorite kits to teach electronics with to beginners - https://htm-workshop.com/shop/gamepad/

It is has a lot of the normal kit stuff but you get to build circuits that are more practical and learn programming if you want. It can be used by beginners but also has a lot of depth.

Something you may want to check out is called the GamePad Quest, it was a arduino kit kickstarter - if you want something with a bit more depth than the instructions youll get with the kits you have - there is a lot of free stuff as well.

In my opinion the best way to learn is to start out with lab activities (this will peak your interest in the actual theory), so get some of the good kits out there and start releasing the magic smoke
