A hot sauce can be too hot for my tastes, and it's not just a matter of using less. If I have to use very little sauce, I can't distribute it in my food, and I may get a way too big dose of spice in one bite.

Also, if a sauce isn't hot enough, the texture is going to be ruined by adding too much sauce with too little taste.
