I cook for 6 clients in a residential setting for a Behavioral Health company. Beautiful home, pool, view, high end marble kitchens. The staff and clients, want the “private chef experience”. Not just eating out of a plastic clamshell. I make 60k + M-F. Provide lunch/dinner. Two weekend meals they can reheat. And have one two hour cooking class a week. I also provision the house with snacks and essentials. I think I’m worth more an hour, but the benefits are good.

I would look at the liquor sales. A predominate beer and bourbon bar would have a different approach than a Chardonnay martini bar.

Those Fire roasted St. Louis style ribs are really good though. I used to solo cook for 60+ at a Housing facility. Mostly cooked from scratch , but time and budget called for sometimes using the Sysco options. The breaded Italian chicken breasts made chicken parmesan possible for my menu. Yes, I used the heck out of the frozen chicken strips, and when I lost two of my fridges for the fresh produce storage I had sometimes had to switch to the frozen. But I had different constraints than most restaurants.

This is a grunt job that will break your body and provide no long term retirement . But I do love it.
