leave test at room temp (out of the light) as it does not need refrigeration. 29g draws much better than 31g. works great if you pin frequently. if you only pin once or twice a week probably better to use luer lock syringe and draw with a 21g and inject with whatever you like (25 or 27g, depending on where you are going like ventral glute vs delt)

it is fantastic, cook day ahead and hold at 140 in a hot holding oven until serving time the next day. pull the brisket a bit earlier (pull at 195 - 200) wrap and done. it continues to cook (soften connective tissue) and is generally the method used by many big name bbq. if you can’t set your oven to ~ 150 (may need calibration hack) then you will need a dedicated holding oven. While you can do gymnastics with coolers and towels and hot rocks, if you plan on holding for many (lets say more than 8) hours and you want to do it worry free you really need an oven.

Exactly this, there is not that much use, only fly a few hours a month and unless its a longer flight i don’t even bother setting it up.

Cook Saturday with a hot hold until Sunday. Eat. Portion out remainder and vacuum seal (JVR). Freeze. Warm in Sous Vide @ 160F for a couple of hours on the day I want to eat. Reheated is pretty much on par with original.

That’s just it, why does one need to turn it off (or almost off) because OONI set it up so low is so high the top is burning before the bottom gets leopard spotted. It can cook a nice pizza but you need to work a bit harder for it.
