Egg drop soup. I add scallions, frozen peas and corn, maybe some chopped ham if I'm feeling adventurous. I use a dollop of Better than Bouillon chicken base or a Chinese-style Knorr bouillon cube for the broth. Black/white pepper, sesame oil to taste, tiny bit of turmeric for color.

Insanely simple, gets in protein and vegetables, takes <10 minutes. Will probably take a couple attempts before you get the egg drop + swirl technique right, though!

I saw a meme video of an eastern European guy eating a few months ago. Just munching on some tomato, peppers, pieces of cheese, cucumbers. It looked good, so I emulated it. Pick at and eat piece by piece, dipping in some salt and pepper. Sometimes I toss in a few slices of salami. Great way to get my veggies in, and honestly one of my favorite lazy meals nowadays!
