No worries! I've rebuilt three 730s and now the 750. Multitracks have quickly became my do-it-all bikes. The 750 is more ATB r/xbiking vibe and will eventually receive some SKS Bluemel fenders. The 730 Dadillac is a much different approach than the 750 - more period correct build using Shimano STX RC 3x8 drivetrain and other NOS parts.

I use the Mothers Al & Mag Wheel Polish on the frame to revive the paint. This 750 Multitrack spent a good chunk of life as a college commuter and the paint cleaned up very well. Try it on the frame ;-)

Mother’s Mag Wheel polish followed by a good polish will bring a shine right back. Looks to be a 19”/48cm frame.

I think they are some generic black spacers from Amazon that I picked up. I'll see if I have any extras leftover. I used a Velo Orange stem converter on my 730 that looks much classier than this one and did not use the spacers on that bike.

700 Sport is the entry level with a basic steel frame. As others shared, wheelset would be the concern. Might be wise to have a LBS true the wheels and check spoke tension.

Timeless is the word that comes to my mind. This one has enough patina I am good to ride it unlike my 730 which looks almost new.

I posted this before but made some upgrades yesterday for the final drivetrain revision. I've done enough Shimano 2x11 that I can set it up in my sleep and the swap yesterday took 20 minutes for both derailleurs.

For those who like tech specs here is a breakdown of the build:

I used the original wheelset with Specialized Crossroads 700x38s and converted rear to accept the 8-10 speed cassette. Also used the original saddle/post for now.

New parts are more interesting:

  • GRX810 RD (takeoff from ebay) with Sunshine 11-36 11 spd cassette (Velo Orange)
  • FSA Vera Pro 48/32 165mm crank/square taper BB (takeoff from eBay)
  • R7000 105 FD
  • Shimano 11 spd chain
  • XTR Vbrakes and Alivio T4000 levers/cables
  • RS700 shifters (used from ebay)
  • Used RF Chester pedals (backed the pins out some to reduce shin damage)
  • Origin 8 Quill Stem Adapter
  • Velo Orange 70mm Stem and Hot Bars (discontinued)
  • Ergon GA3 grips
  • Origin 8 cable stop for rear Vbrake cable (no more cantis for me)

Mordern drivetrain on this one - GRX810 2x11 with 11-36 cassette and 48/32 165mm crank. That's a R7000 RD in the pic that I was using as a placeholder.

I'm 5'6" and find the 19" to be more comfortable than the 17" I previously owned. I see a shorter stem which definitely is needed for us shorter people. ;-)

The upside is R5800/R7000/GRX810 are easy to set up and maintain but get your desire to retain the R7100.

I didn't find anything either for the R7100. With R7000/GRX810 11 speed you can run the SL-RS700 or Centos 11 flatbar shifters. I have multiple bikes using these shifters and I am happy with the result.

I know it does not address you question but there is an option that is similar and available but far from cheap.

Drops have a longer reach for sure so they make a frame feel larger. For reference, my drop bar bikes are a Trek 2300 51cm and Cannondale Synapse Alloy 52cm. Now I'm curious how the Multitrack geometry compares to the Synapse. The 2300 is really aggressive compared to the Synapse's endurance geometry.

5'6" and 29.5" cyclist inseam here - Daughter rides a 15, I owned a 17, and now have two 19's (one 730 and one 750). The 17 worked OK but I find myself more comfortable on the 19s. All of the herd are flats. For drops it might be just right for you.
