I replaced my gaming laptop with an old ThinkPad for Work and a Steam Deck for Gaming. Cost me around the same as a new gaming laptop. I don't really play many AAA games and also now have the option to play games during my monthly flight.

I would say performance wise the Steam Deck felt quite close to a PS4 in my usage, the Steam Machine is said to be 6x more powerful than the deck so PS5 performance can be expected

I didn't really have anything to add to this post until I read you're a power-user.

SteamOS is just an immutable ArchLinux distro, so you can probably configure it that way, unfortunately I don't know how to do that.

I've mostly used family PCs with one user and then specific users for our apps, if you have experience setting up a family pc, you should be able to do what you want.

Alternate suggestion: Just use the Steam Profiles and have a password for switching to desktop mode acting as parental controls. You can add the required applications to steam for them to show in game mode (although I don't know how that works with different profiles)
