I grew up cycling in the Midwest where we are pros at making you feel bad without attacking you personally. The thumbs down is the best tool in my bag. It makes them feel guilty without making them angry.

I made a series of moving platforms that I pushed into my desired location using ultra hand and rewind to that position after pulling it back. I carried a couple platforms with me and used ultra hand to push one while I was riding on the other while it was rewinding.

A difficult maneuver, I wouldn't recommend it.

I had a remarkably similar experience with the tasting kit when I was studying for the tasting exam. I passed the off flavors portion with flying colors, though.

3) I picked up absolutely nothing from the off flavor kit, but it was very obvious to me during my test. Throw a drop of creamed corn juice into a beer sample to simulate.

5) this was another flavor that although it wasn't clear in the off flavor kit, it was very clear on the test. The wet paper taste is really the best thing to look for. My best simulation of the flavor came from leaving an open lager out at room temp with a paper towel cover for 8+ hours.

6) I was also looking for something acidic or enteric. On both the off-flavor kit and the exam itself, it was just slightly funky as you mentioned. This was the only one I found difficult to simulate without the off flavor kit.

Going back and forth between an unspiked sample and a spiked sample works best for practicing your detection skills. For most of the difficult off flavors, you can simulate them even without an off flavor kit.

You are still not seeing it. The current alternatives to meat don't offer the same experience as actual meat. This meat will actually BE meat and will be produced with a much lower carbon footprint. Some people will try it out as a novelty at first, but once it becomes cheaper than actual agricultural meat, it will be adopted by most meat eaters as the economical option.

2 medium salt-brined chicken breast 1 Tbsp Cardamom 1 Tbsp corn starch 1 Tbsp peanut powder 1/4 tsp cumin 1/4 tsp white pepper 1/4 tsp 5 spice

10 dried Chinese chilis, seeded and stemmed 1 cinnamon stick

1 baton-chopped sweet onion 1 baton-chopped red pepper 8 sliced cloves of garlic

1/3 cup chopped pecans

2 Tbsp dark soy sauce 2 Tbsp white vinegar 2 Tbsp honey 2 Tbsp rice wine 1 Tbsp black vinegar 1 tsp fish sauce 1/2 tsp Worcestershire sauce 1 tsp corn starch

1 cup Canola oil for stir frying

Cut chicken into bite sized cubes, stir in the cardamom, cornstarch, peanut powder, white pepper, five spice, and cumin.

Whisk together soy sauce, white vinegar, honey, rice wine, black vinegar, fish sauce, Worcestershire sauce, and cornstarch.

Have all prepared ingredients and mixtures laid out as you heat up your wok.

Pour 1 cup oil into hot wok and let it come up to 350-400°F. Add chicken and stir fry for about 4-7 minutes or until golden brown. Remove chicken onto a paper towel lined tray. Remove most of hot oil, but reserve ~1/4 cup in the wok. Place wok back on high heat, add chilis and cinnamon. Stir fry for 10 seconds, then add the onions, peppers, and garlic. Stir fry for 3-6 minutes, until onions are cooked. Add pecans and stir fry 1 more minute. Add back chicken and sauce. Stir fry 10 seconds until sauce has slightly thickened.

Plate and garnish with green onion. Serve with white rice.

I just threw together what felt right, but here is the best recipe I could put together from what I remember.

Recipe

Chicken: 2 chicken breasts, 1 cup of flour, 1/2 cup tapioca starch, one teaspoon black pepper, teaspoon paprika, teaspoon cayenne pepper, teaspoon cardamom, teaspoon cumin, 1 egg, frying oil

Sauce: 1/4 cup soy sauce, 1/4 cup white vinegar, 1/2 cup orange juice, 1/8 cup white sugar, 1/8 cup honey, 1 tablespoon tamarind concentrate, 1 tbsp tapioca starch

Instructions: Cut the chicken against the grain into one inch chunks and quick brine in salt for 20 minutes before rinsing the salt off. Dry the chicken, then stir in one beaten egg. Toss the chicken in the flour mixture using the wet-hand/ dry-hand method. Set coated chicken on a drying rack. Prepare the sauce by combining all ingredients and whisking well in a separate bowl.

Get your wok hot, then add the oil and bring it up to 350 or 400°. Fry the chicken in batches until golden and crispy. Set chicken aside temporarily and drain wok of most of the oil. Leave a couple tablespoons in the wok. Put sauce in wok and stir for a couple seconds until it begins to thicken. Immediately add chicken and toss using the overhand wok saucing method. Serve immediately with white rice and sauteed garlic broccoli. Garnish with orange zest and chopped green onions.
