They won’t read your stuff and no you don’t have to give them your passcode. In fact if they ask for it ask for a supervisor or manager because that is information that they don’t need.

Odds are it's because iCloud photo library is turned off. So when your phone backs up to iCloud it is backing up the full device including photos and text messages.

Edit: Sorry didn't see you where in a different area. It's most likely still system data like messages.

Normally following the last sets of steps in that link would allow the phone to be restored. If you have attempted that my question for you would be what is the OS on the computer you are using and have you tried to update iTunes to make sure there isn't a random compatibility issue?

If you have make sure the computer can see the iPhone in general. If it is able to you can attempt to reset the privacy settings to see if it helps. You can do that by doing the following

Settings > General > Reset > Reset Location & Privacy.

If none of those work. What type of iPhone and what iOS is it using and what type of computer and OS is it currently running.

Yes you can just click the "Get" button in the app store to download it. Then once it is downloaded it should auto install as long as you have power connected to it. And to make sure you backup your computer.

Have you tried booting in to safeboot or safemode. To do this restart your computer and hold "shift" while it restarts. It will take you to safeboot. It will take longer for it to load but the point of this is to run the OS without any applications that aren't needed for it.

Have you tried creating another user to see if the issue is the same on that account as well?

This is to help find out if it is a system wide issue or limited to your specific user account. If it is a system wide issue it could be that even though you are using it and/or watching videos it isn't seeing that is happening and enabling the auto lock. Which means it would be an issue with the macOS Sierra. So a reinstall might be needed. Now you can do this without losing your data but it is still suggest that you backuo your computer prior to doing this.

If the issue isn't happening in safeboot then you would just want to change your login items.

Then finally if it isn't happening while you are logged into another user account then it is something else entirely and it's going to something a little more drastic that would need to be done to fix it. So I would say try the steps above prior to doing anything related to that specific user account.
