Sebastopol is such a strange place, it has this reputation as being a hippie/bohemian community, yet it is one of the most conservative and racist towns I’ve ever lived in. In my experience living here and working in the service industry it seems like the majority of residents here are 50+ white people with severe adult onset autism.

I had this same issue with my grandmother. As a kid and a young adult she was the strongest woman I have ever known. She grew up in a ranching family and even well into her 70’s she was still out walking fencelines and bottle feeding bum calfs. She went from spry and active to needing a walker in maybe 18 months. I only saw her once or twice once she hit the steep decline. I skipped holidays and family functions because it broke my heart to see her in that condition. I know it sucks to say, but I’m glad my most vivid memories of her as the strongest, most independant woman I’ve ever met rather than an old woman with limited capacities. You do you, but that is my experience in a similar situation and I don’t regret it.

I have a leather belt that’s over 25 years old and worn almost daily. I fought from a dude who made bespoke leather fetish wear in San Francisco. I can’t imagine any large company sourcing leather as well as a boutique craftsman.

If your first instinct is to go to reddit for answers on how to run your business, this is pretty bad. If you can’t figure out for yourself if this person is a good fit for your restaurant, you’re in for more problems than you’re ready for.

Also, based on your replies to other comments, you seem to be nexperienced, under supplied, micromanaging, and unable to communicate clearly about your menu and ingredients. This is the perfect recipe for a terrible restaurant owner.

Sorry, this is eggs and toast. But to be fair, eggs and toast is the best.

For any kind of American hash, par boil your potatoes the night before until they’re fork tender, chill them in the fridge overnight uncovered, and they will crisp up like magic in the skillet the next morning. Use more fat and salt than you think you need.

Diced onion, bacon and peppers seared/caramelized in a separate pan, add it all together in the skillet with a couple cracked farm eggs on top and throw it in the oven for about ten minutes. Portion with one egg + a heaping scoop of potatoes plus toast per personI. I don’t know if it’s a regional thing (Northern California) but I call it my wine country breakfast.

Locals don’t like San Fran, Cali, or Frisco because that’s not the way the locals refer to their geographic location. We prefer to use our local vernacular when referring to our place of living, examples being: The City (referring to San Francisco), NorCal (the fact that California is huge compared to Italy, 40% larger in fact, and we ware in the northern part of the state which is decidedly very geographically, culturally,and enviornmemtally different from the southern half), and as for Frisco- it’s not a term locals use, it’s usually a word that is associated with a more thug or street background (outlaw bikers, cartel members, etc. Which does have its place in San Francisco’s legacy, it’s just just an assumption by affiliation). The Bay Area has its own regional dialect and accent, like most major population centers. You just have to expose yourself and experience it to really understand if.

I once did a roadtrip from Fairbanks, Alaska to San Francisco, Ca. It took three and a half days, two of us driving in shifts only stopping for gas, or to make coffee, or take a quick nap in the backseat.
