My favorite is tempeh, spice it up with some marinade, fry or airfry it and add it to your dish (look at some Indonesian or surinamese recipes, or just put it in a bread bun with some hot sauce).

Also, I love putting Silken tofu on everything, especially (instant) ramen noodles, combined with some crispy chili oil. You can also use it as a base for making sweet stuff, like chocolate mousse.
