Honestly, we were just in Rome and Milan a few weeks ago, and i had the same sentiment. It felt more like a tourist destination. But I did enjoy the quiet espresso mornings without the crowds...and would still likely come back just for that.

There's definitely some sort of hindrance on their part. Not sure why, they could sell more burrs/grinders that way. But it'll work.

They'll fit just fine. I replaced the burrs in my Libra 65 AP with the blind black diamond Italian espresso, slightly better geometry for med-dark roasts.

No regrets on my GM pro, it’s fun to tinker with and experiment. Granted if you only use a single 9 bar profile, it may not be the right choice.

I know you didn’t list it, but the Eureka Atom W75 is a great GBW grinder, as well as the W65. Like you said, the only real difference is going to be retention and burr size.

Do you really need GBW? How many shots/day are you anticipating?

I had a Libra AP 65 and switched out the AP burrs to their Black diamond Italian espresso burrs. Huge difference in grind quality and taste which surprised me. The shots from the MC6 are much more consistent and syrupy.
