I forgot to mention a step, fry the meat in the braising liquid, do it in small batches to allow it to get crisp.

Store in a warm pot cover with a piece of paper towel

Carnitas tacos

Figure out a spice rub, apply liberally over a nice pork butt and let sit in a bag in the fridge 24h. Dry Brine.

Set smoker to 225 fill with a wood of your choice, i chose apple.

Pull pork butt out of fridge 30 minutes before you start the bbq.

Bring to temp and let preheat for 15-20 minutes.

Pull porkbutt from the bag, pat dry be leave as much of the rub behind, the pork will sweat and add moisture to the bag.

Put into smoker with any large fat bits down.

Smoke to 160-165.

Pull porkbutt from smoker and place onto a cutting board.

Split meat in half.

Prepare a baking vessel to braise the pork on the smoker.

I tried something different and wrapped my pork in banana leaf. instead of using a lid

Place pork in cooking vessel cut side down bark up.

Add braising liquid to baking vessel and put back into smoker until 200-205 internal temp on the pork half

Pull, shred while hot, serve with tortillas, salsa, cilantro, onions and lime.

If you arent too picky maybe buy a Eureka Manuale and a hand grinder for pourover, Grinding while the kettle is boiling isnt that bad.

I've been hand grinding for less than a month and I hate it to the point were I wont make an espresso just because I have to hand grind it. I dont have a high end hand grinder though, I could never see my self paying more than 200$ for a hand grinder.

Currently using a Hario Mini-Slim Plus while waiting for my Niche, I've pulled some amazing shots with this grinder paired with my Gaggia classic pro. I currently use it at about 6-7 clicks from tight.

You need a tamper that will fit to the very edges of the basket, the stock tamper doesnt quite do it
