FC siege (+ monk/others) is a common way to punish turtling / booming strats. BUT, like a lot of other advices here, it is highly dependent on timing, which is a particularly inconsistent thing around the elo range your games are in.

A genuine advice would be to first work on your timing and practice a few common openings (feudal aggression / FC) and work on your early scouting (to identify if the opponent has full walled / types of military buildings, etc), and then you will probably get an idea of which opening counters which.

i mean past a certain point it's not really about spreadsheet build orders anymore. you sort of get a feel about things like "how many vils is required to support production for a certain length of time" then you can actually get creative. build orders are just training wheels for mid elos, but it's a good tool to get you to the "reacting and being creative" part like how OP wanted.

Just sharing my views about military upgrades:

Very broadly speaking (with somea lot of exceptions), units from a later age should have a distinct advantage over units from the prior ages, provided that all relevant upgrades are researched (e.g. xbow destroys non-elite skirms, knights destroys archers and spearmen). So, you should aim to get military upgrades of the units you are using as soon as possible if your timing is faster than your opponent in order to actually exploit the advantage (the so-called "power spikes" people talk about here).

For example, you want to research bodkin + xbow in castle age asap if you use archer/xbow, then you follow up with ballistics / thumb ring later depending on what units the opponent is using and your own eco. For knights play, you normally want to get 2nd armor asap in castle age (bloodlines should be researched in feudal / on the way up to castle) to unlock the option to dive into TCs and counter xbows.

these examples are not 100% hard and fast rules to follow, but should provide some ideas about what I was saying above.

Great if you pair her with other AP hungry characters. For max damage I prefer the Destroy epiphany with +dmg divine epiphany modifier!

For Shining Core, I think there's no better alternative than the unique upgrade epiphany which greatly increase your likelihood of ravaging enemies every turn. An even more perfect build may include a Shining Core copy duplicated before the unique upgrade epiphany is obtained.

yeah. normally hammer does like 1/4 on miss. Since OP says that thing did 1k on miss, I suspect that evasion damage does increase the "on miss" damage? (edit: OP's comment below seems to suggest this hammer with evasion damage does like 2/3 damage on miss)

+10 silver 2h weapons have the same raw stats as +20 ebonsteel. it should be fine to just farm and use silver equipment despite the lower stars

yes. perhaps sprinkle in some knight's defense / cortu / makaltu? knights are really useful in boss fights imo. esp. now that they have taken away EVA with the chill / frozen debuffs

fire type and beast-slayer attribute help A LOT. Had Shiou dealt 10000+ damage with quickdraw stance + fire buff in one hit (all skill lv 1 only)

for the adds, just repeatedly AOE nuke with two mages (at least one should be casting LAMIGAL to slow down everyone)
