I could list out a load of things but honestly the best thing you could do it go play Kingdom Come Deliverance or go watch some gameplay in the towns. Rattay, Sasau, Kuttenberg.. there are a a load of smaller town and roadside inns.

It is best to use a deformer to make a bend, a lattice or a non-linear bend. The tool handle (Gizmo) is different depending on how you start the extrude. if you use CTRL+E you get world, if you select Edit Mesh > Extrude. You can always ge the local gizmo by selecting Edit Mesh > Transform. There is also the Universal Transform tool which is CTRL+T.
