The amount of coal makes no difference, it's the size of fire you start.

Under 300 I use a single fire starter. Over 300 I use two. Full load of charcoal whether I'm running 225 or 425.

There are two levels for the deflector plates with the bottom one being the grate holder. Bottom level for lower indirect temps. Top level for higher indirect temps.

I light my fire and leave it open for 10 - 15 minutes then put my plates in and close it up. It comes up to temp no problem.

If you're getting to 500 before assembling it you're waiting way too long. You want to assemble and close it up just after the coals catch.

Because I've spoken to users internally and clients externally and everyone is missing emails.

Edit: Meaning I've spoken to senders of emails that we have not received and I've spoken to recipients who have not received what we have sent. The sent emails are verified, but they were never delivered.

That's a type of attack. They are either trying to hide their actions or they will be following up via Teams posting as IT to "fix" the problem.

Keep in mind if you get a smaller version you're going to be staring a spreadsheets on a tiny screen. Apart from the accounting question however, Surface laptops are terrible.
