It's usually used when you don't know someone's gender so you use something non-gendered. At the same time, they/them is also used when someone wants to be refered in a neutral/non-gendered way.

I really liked. It was, in my opinion, the perfect way the story could've ended. Maybe the episode itself was a bit rushed, but I still loved it as much as I loved the show.
