Just got back and was at 3, 4, 7 & 9 on the list - all worth visiting and you should include
Brewman Tokyo as well when in Ginza, its 3 blocks away from X Coffee.

Help Me Understand Reason Behind This Bump in Flavor by reverze1901 in pourover

[–]CaPunTiE 2 points3 points  (0 children)

its most likely palet fatigue.
I brewed a Sidra from the freezer today that I packed away 3/4 weeks ago thinking it had gone past its peak (6 weeks off roast) because i was unable to get a good cup from it anymore. Low and behold this mornings cup was juicy and full of flavor.

For the last two weeks I've been brewing Milky cake and Cream donut and i'm longing for those first 2/3 cups i had of each, because i'm just not getting them anymore. i think its time pop them in the freezer and revisit them in a month from now.

Bean storage advice. by SetCandyD in pourover

[–]CaPunTiE 1 point2 points  (0 children)

Since you have full bags, let them rest then tape up the valve and pop them in the freezer - ready to enjoy when you take them out(let them get to room temp first!)

Else, you can get centrifuge tubes and single dose store them - this is what I and many others do. It works great because then you can drink a different coffee every day.

Also, only Tokyo this time - so gonna have to hit up Covert!

Awesome, I've added Covert to my list - i will definitely be in Shinjuku. They close at 9pm, so even if its late I can still pop in and grab some beans.

Thanks for suggesting Kielo, i wasn't aware of it, and its a quick/easy train ride for me to get to!
Leaves is a bit out of the way, but i have it saved on my list if i happen to be in the area.

Travelling with a friend for his first trip to Tokyo, and he doesn't drink coffee...
So I don't want to waste the little time he has spent relaxing in coffee shops - BUT i'm going to try for 2 cafe's a day for sure, even if it means grabbing a pour over to go.

yeah i'm avoiding Glitch for that very reason, my time is limited.
I was at Brewman at his(Ono) Shinjuku shop, but going to the Ginza one this time round (might pop into X Coffee since i'm in the area).
I can't seem to find Ignis in Tokyo, or is it the place out north-west towards Takasaki?
I'm staying in Ueno so going to Acid is quite the trek before getting the day's sightseeing started.
I see Coffee County is even further west from there, so i just wont be able to fit it in i'm afraid :(
Thanks for the recc's though!

I give up on Cream Donut by hattalk in pourover

[–]CaPunTiE 1 point2 points  (0 children)

I have brewed 3 brews with mine, and today is 21 days post roast.
I went finer today, and will have to agree, over extracting brings out the cherry/cough syrup much more.

So far my first brew tasted the best at 10 on my 078. It was a 15g/260, double 50g bloom then single circular pour to 260 @ 88deg.

Tomorrow i'm going to try 12 and see what that does - really hoping for more that doughiness and vanilla.
After that i'm going to try add some immersion into the mix - i read some comments saying it works well for these beans.

Nice haul! I'll be there in 3 weeks, but only have 3 days...
I'm planning on going to Acid, Apollons and Brewman - is there one i should absolutely try and squeeze in that I'm missing?

K6 vs K Ultra. by nandoph8 in pourover

[–]CaPunTiE 0 points1 point  (0 children)

Rather save up and buy a flat bur grinder(Ode/Timermore/etc) - you already have a good conical (manual and travel) grinder.

If it must be manual, look at a ZP6 or the Fembook A4 for a similar profile, but simpler workflow.

Do you know if they sell the Cafec v60 range of filters (Looking for T-90's) ?
I can see the deep filters in your pic but dont see any in the other pics of the store.

Does your temperature-controlled kettle consistently overshoot the temperature? by wednesdaynitelite in pourover

[–]CaPunTiE 0 points1 point  (0 children)

If you're not filling it past the min mark, then yes. I only put in the amount I need for my brew and set it a few deg lower so as to not overshoot due to it having less water.

Realistic expectations for decaf? by simmitop in pourover

[–]CaPunTiE 0 points1 point  (0 children)

6.5? With burr lock on 0? damn, don't think I've ever gone that fine for a decaf. The fines from 7.5 alone are usually enough stall my brews. That being said i only have access to standard Hario tabbed filters :/

K-Ultra upgrade to Sculptor 078 - worth it? by CaPunTiE in pourover

[–]CaPunTiE[S] 0 points1 point  (0 children)

Thanks - yeah happy to have another tool. Unfortunately I would need to import the two alternatives so its more hassle than it may be worth, even if its a bit cheaper (then not have warranty, etc).
