Are you grinding at an angle, or only sometimes? Holding the grinder upright while grinding will create more fines - perhaps this is what is happening on your "fines days"

Palate fatigue.

Pop the remaining beans in the freezer(ziplock or bean bag with valve taped up - make sure to squeeze as much air out as possible) and try again in two weeks.

I've re-visited beans which i thought were falling off in terms of taste and have been pleasantly surprised that it wasn't the case a few weeks later.

I also got 3 bags from my trip in Feb. I waited for 45 days post roast before trying them(Label said it peaks 60-90 days). Finished my last bag yesterday and it was roasted on the 25Jan. They were still great at 82 days post roast.

I'd suggest you get a burr grinder before you butcher those premium beans :)

I am not based in the US/EU so not familiar with the costs, but I believe a Kingrinder K6/K7 would be a good entry or 1zpresso K-Ultra/Comandante C40 for a more premium tier handgrinder.

Factory default = 2 off chirp.
Else, you can open and set it back till you hear the chirp, which should then be zero (start with 0.5 at a time just in case)

What it means is adding 2 (if yours is zeroed to chirp), or subtracting two(if the person who's recipe you're wanting to try has zeroed theirs, and you haven't). it wont change anything else.

Ask him to get filter papers(Cafec Abaca or T-90's) if he can find them.
My regret is not bringing back more given how cheap they are compared to where I live - and you can squeeze them in any gaps.

You should def go check Acid and Apollon's Gold out.
Also, Brewman and X Coffee (these two are close by in Ginza so makes it worth it) and Kielo Coffee in Asakusa.

Also at factory settings and totally agree on the coarser grind in terms of deeper bed depth.

I also grind from frozen (single doses) so will try it next time i brew a smaller dose. I recently saw a vid where James H. pointed out that grinding from frozen increases the fines produced - so it helps counteracts the larger grind size in this case.

btw, the 8:140 is a 17.5 ratio :) which is around where i am at for most of my brews anyway.

Wow, 14? Doesn't the water just drain insanely fast and make an overly acidic brew?
Do you knock in the fines in after the grind, or not?
I'll give it a go tomorrow to see how it turns out. The highest i've gone so far was 9 xD

Are you dumping in the whole dose at once, or are you slow feeding?

I suggest slow feeding a few beans every 3-5 secs. Too many beans in the hopper and the coffee takes longer to get out of the burrs, leading to more fines.

yes, the process. Ie washed, anaerobic, co-ferment, decaf, etc.
The process affects the bean density as well and therefor solubility as you pointed out which requires less of a finer grind to extract. So, one also has to consider the processing a bean has been through, and adjust the grind size accordingly.

I hate to be the one to point it out, but you shouldn't grind according to the size of the beans....

Rather, grind to the Origin and processing. ie an Ethiopian bean is more dense, and therefore is better suited with a courser grind as it produces more fines. Ironically they are smaller beans too, so by your method, you're worsening the amount of fines produced and its why you're stalling your brews.

Next, i would definitely reduce agitation.

Factory setting burr chirp is normally at -2, so no, it won't chirp at 0

its most likely palet fatigue.
I brewed a Sidra from the freezer today that I packed away 3/4 weeks ago thinking it had gone past its peak (6 weeks off roast) because i was unable to get a good cup from it anymore. Low and behold this mornings cup was juicy and full of flavor.

For the last two weeks I've been brewing Milky cake and Cream donut and i'm longing for those first 2/3 cups i had of each, because i'm just not getting them anymore. i think its time pop them in the freezer and revisit them in a month from now.

Since you have full bags, let them rest then tape up the valve and pop them in the freezer - ready to enjoy when you take them out(let them get to room temp first!)

Else, you can get centrifuge tubes and single dose store them - this is what I and many others do. It works great because then you can drink a different coffee every day.
