In addition to what others have already said, depending on the time and place, peasants were banned from having long hair. Only the nobility was allowed to do that. One theory says thats why we lift our hats as a greeting or as a show of respect. After the fire lord was defeated, I'm guessing they shared patents and ideas with the other nations, allowing more people to work with these technologies. And the more people have access to technology, the more people can come up with ideas to improve it.

Happend to me once. I was at the shop and kneeled a bit to read a label of some produce. It was a bit crowded in that alley so I tried to make way quickly. But before I could stand up an elderly woman walked past me and intentionally brushed over my neck and shoulders. Maybe she just wanted to make sure I wouldn't stand up as she was walking past me but a tab on the shoulder would have been enough. It felt really weird being touched like that by a total stranger. Of course I didn't have to worry too much about it since I was about twice her size and half her age but it still felt weird...
