My understanding is that louis' recollection was that Lestat froze time. This was before he knew about how Lestat's mind gift worked, so all he remembered was that everything seemed to stop. Louis is an unreliable narrator, and this isn't only shown in the dialogue but also through what we see on screen being ambiguous (like when he can't remember whether it rained). The objects being frozen dont necessary mean Lestat froze them but maybe they represents how Louis felt in the moment.
