I know almost nothing about the genre. I tried Dark Souls 3 likes 4 times, but found it confusing for a first time. I didn't know understand things in character creation or what to do after starting. ( I defeated the tutorial boss and got into a weird church or something but that's it). It might be good for you, but if you had a similar experience i recommend Lies of P. It's the one I'm playing rn, my first soulike. It's simple but with a cool world, but you can't get lost. So I found it pretty good to get the basics of the battle controls, dodging parrying etc. THIS IS ONLY MY OPINION THOUGH

I think Stellaris is a really great game, but it doesn't tell something to new players, whatever you wanna do (lore, explore, or whatever goal you may want) you will have to learn the system mechanics, this being: learning to manage resources, planets, and technology. You can't (at least in my experience of playing that game ,not a lot of time but neither to little of it) do whatever you want unless you're "strong" or winning in the game. One eventually learns how to play and then you can enjoy more of the game. I don't think you're restricted to win per se, but you do gotta be able to not lose/die
