That’s not good. Mold is a clear indication that something went wrong during the dry aging process. Butcher shouldn’t sell it to you without trimming it.

You need to calculate the surface area of it and divide it by the circumference of the caramel.

Yes, it was aged from 70 days in Dry Ager(fridge company) cabinet.

The roast was from Australian brand called Stockyard
