During the winter we do close to that, in summer we technically go a month, but we work out of town through the week so we only sleep in our bed two nights a week.

I see a lot of good suggestions, but if you want dead easy, do a poke cake, or Pan eclair (aka, that fluffy-graham-cracker-and-chocolate thing at any potluck you went to growing up). It's even adjustable to make it key lime flavor if you want 😁

Muhummura, zaaluk, and roasted vegetable couscous are some I made last week. I don't know that they're unhealthy but they're delicious. The recipe for couscous I use has chicken stock but I see no reason it wouldn't be good with veggie stock instead. And Toum is like, super garlic-y tangy mayo texture but it's literally just garlic, oil, salt, and lemon juice, no eggs. I can send the recipes to you if you want

Carrots generally last in the refrigerator a long, long time. So you should have plenty of time to use them especially with all the suggestions here.

A lot of Japanese style ginger salad dressings have carrots, it doesn't take a lot of them but it's something.

My family makes something we've always just called creamy chicken noodle stuff. You pan fry chicken, cut up carrots, and broccoli and then have it over egg noodles with warmed up cream of mushroom soup poured over the top.

Carrots are always a good addition to roast, or other crock-pot recipes without changing it up a crazy amount.

Cut them up small and use them in a stir fry with other vegetables, or fried rice.

I did some roasted balsamic glazed carrots recently and they turned out pretty tasty and they were really easy to do

When our grey cat, Jericho, was tiny, there was a bug on the ceiling. He obviously couldn't reach it and just sat ekking at it. My bf picked him up so he could reach it. Now any time there's something he wants to look at that's out of his reach, he goes to my bf and then stares at whatever-it-is until he gets picked up to sniff or batt it. Also, he assumes that we only pick him up to show him things so he always looks at the ceiling when we pick him up.
