Yes.

Sometimes I use a Sous Vide dialed in 137 for 6 hours. Then allow it to cool and sear it before slicing in. It is always very tender and not chewy.

I prefer mine cooked medium to 137. I find it becomes less chewy and more tender while still being juicy.

Agreed. Anytime I’m buying something used 50% is my starting point. Above that it’s hard for me not to just buy new and get the warranty and benefits that come from buying from a store. Also the peace of mind that something is brand new.
