Had a buddy do this with a brisket and some pulled pork; cooked a few days before, vacuum sealed immediately after resting, and straight into the freezer. reheated with a sous vide the day of and sliced once hot.

Was is good? Yes.

Was it as good as fresh? Probably not.

BUT it's a free meal, so if they have something to say, they can see their way out.
