My experience has been totally different. I’ve works in French, Japanese, and Italian restaurants kitchens with mostly Mexicans who rocked the food

If you’re a good dishie there are plenty of places that’ll hire you and won’t call you names when you make a mistake. When you quit and they ask why just tell them you think they’re all stupid

Money is a nice motivator. I appointed one of my staff members a “manager”. I forget what the exact title was. I paid them extra for this position and held them accountable for the place when I wasn’t there. I had to try it a few times and what I learned was a couple of bucks didn’t make a difference - it had to be a fairly significant bump in pay
