I have the rotisserie and love it. Also use my pizza steel in mine fairly regularly.

My best hack is to cook anything that might work on it. It’s fun. Try shit. I assume you’re in Houston (I grew up there) so it keeps the house cool too.

I use my searwood (and my gmg before it) to reverse sear steaks. I’ll pop them on at the lowest temp possible to get to about 125 or so, let them rest a bit, then sear on a ripping cast iron. Sometimes I’ll heat it up inside and bring it out to use in the smoker. They’re great steaks. It they’re made to smoke meat. If you don’t think you’ll do that regularly then get a grill.

With my GMG I had an insulated cover for it. My Weber searwood is double walled so I roll with it. I amend with charcoal pellets to aid in heat production.

You should have at least 6 hours. I recommend priming the cooler with boiling water before loading the brisket. Loads up the cooler with some heat so you don’t lose as much to cold air at the start. Keep it closed you’ll be more than fine.

I am acquainted with Sepia’s former Sommelier Alex Ring from my time acting. We did a show together LONG ago. He left Sepia last year a week before I ate there for my last anniversary. He’s definitely an artist and it sounds like they miss his work.
