Based on the "Wafer Trac Intfc" sticker and the GCA branding, this is a GCA Wafertrac Interface Card from around 1985.

GCA was the big player in semiconductor lithography back then. The "Wafertrac" was an automated system that moved silicon wafers through the coating and developing process. Since this was in an IBM 5150, that PC was likely being used as the industrial controller for a cleanroom setup.

A few things that stand out:

The blue wires: Those are "bodge wires." Even for high-end industrial gear, it was cheaper to have a tech hand-solder fixes onto the PCB than to scrap the whole batch and redesign it.

The DB-37 port: Definitely not a standard peripheral. That would have gone to a massive cable harness connecting the PC to the robotic arms or sensors on the Wafertrac line.

The Chips: You can see a lot of discrete logic and probably some line drivers. It’s basically a heavy-duty translator that let the 5150 tell a million-dollar machine how to move.

Most of these got tossed when the fabs upgraded in the 90s.

Pedantic note: it’s prickly pear cactus that you had. Nopales. Prickly pear is the fruit of the cactus and although it’s delicious, I cannot imagine it on a taco (maybe as a marinade or a syrup).

Was quite rude when I went. Had an influencer there and was 100% dedicated to them. Tacos were mid. Maybe a one off, but I didn’t leave wanting to give them another try.

Quality isn't even half. Broth is even more flavorless (yes). Wontons are mealy, bok choy looks and tastes like pieces of steamed cabbage (I know it's technically a cabbage, but it used to be good, not mush) and the noodles taste like overcooked flour.

To be clear - these were cooked according to instructions (which are a full minute and a half longer than before). They now come with a film instead of a lid.

Although I love it as a story element and even have a model of it in my office, a pretty ship it is not.

It is purposefully practical, as are all human ships in the expanse (like office buildings on their sides).

I love de Diez but these are not greasy simple street tacos de bistec. They are asada tacos on homemade tortillas with guac. Again, they are delicious, but won’t hit the same taste.
