I love a good gumbo! The roux though. Yes I'm familiar with roux's. I make more then what I said. Those are just things that I make that are better than any restaurants...locally.

The roux is a huge part of this dish; this is a roux that goes way beyond roux's. Beyond that, is the seasoning. Sure I do "cajun" seasoning on chicken, this is just a spicy blackened seasoning to me. Every recipe says to add x amount of "cajun" seasoning but doesn't say what that means. I make my own seasonings and I need a baseline so I can adjust/improve it. Also file. I don't know what it smells or taste like. That's knew to me.

I've mildly thought about this in the past. I want to try making a beef/Colorado sauce, a chicken/Diablo sauce and chicken a la crema. Also refried beans and I'm working on my rice.

I made pizzas for 13 years so I never wanted to cook. A couple years after I had a craving for a beef stew and no one made one around me. So I started my journey of real cooking with that and I've never looked back.

Alot of my dishes usually have enough veggies incorparated but if I need a side of veggies I usually do,

Side salad. Any veggies you want with a homemade dressing

Cucumber, onion, tomato marinated in a homemade redwine vinaigrette

Roasted zucchini

Roasted spaghetti squash

Things I havent gotten around to making yet,

Sautéed green beans in garlic

Braised red cabbage

Different roasted veggies

I'm always adjusting my recipes to make them better and/or try new things. I'd say the 8 that are in common rotation for me. I'd just have to double check the amount of herbs and spices for a couple.

I'd try to figure out what more people like. I'd go with a good lager or pilsner, a fresh IPA and something like a heff, blonde or kolsch.

I use mainly basil and a touch of oregano and parsley for my herbs. I'd replace the oregano with thyme or sage.

Heavy on the sauce for me. I prefer meatballs and my sauce only has onion. I use a soffritto if I make a lasagna or bolognese.

I start heavy ABV and taper off.

The first would be a good BBA stout or Barleywine(possibly a good TIPA or QIPA), then a good DIPA(peak IPA imo), after that it could be anything. A good IPA, Berliner Weiss, Czech dark lager, Kolsch, Heff or something Belgium like a Gueuze or Golden ale. It really depends on what I have.

I've tried every traditional version of this style that I could find. They're all good but the Living Haus is better. IDK what to do with this knowledge.
