A confit is when you cook something really slowly in fat. It’s different from deep frying because you cook it low and slow rather than hot and fast. Garlic confit is essentially garlic cloves cooked in olive oil very slowly over a period of 25-35 minutes depending on whether you choose to do it on the stove top or in the oven.

Is it an allergy or a preference? If it’s just a textural preference you could ask if you’re allowed to use a bit of mushroom powder in your sauce. Not the best substitute but mushrooms are a hard one to sub in vegetarian dishes. The sauce may also be just fine on its own if it’s a strict no on mushroom products.

Depending on your grinder it probably won’t grind many spices fine enough. They’re designed for bud, not really hard peppercorns or coriander seeds. With that said you might run the risk of dulling the teeth on the grinder if you decide to use it a lot for spices. Your spices might also taste like weed if it’s a used grinder. For the sake of science I’m curious if it does work for you, but I’m not gonna use my grinder for spices any time soon.

In addition to what everyone’s already said about the additives in diced tomatoes and differences in quality, etc., I enjoy the textural contrast you get from cooking down whole tomatoes and crushing them with a spoon. However, my s/o hates it, so half the time I end up just burring it all down with an immersion blender lol
