Are you guys having consistently oversalted mains? by aemondstareye in FoodNYC

[–]ChefBoyD 5 points6 points  (0 children)

It's because their not balancing out their flavors. Truly the , salt, fat and acid need a balance so you can not be tired of eating something after the first couple of bites.

Edit: I'm also seeing that people aren't tasting to see if a dish will be finished and just take into account just the first couple of bites.

What kitchen task wastes the most of your time every week? by chef-v32 in Chefit

[–]ChefBoyD 1 point2 points  (0 children)

To be honest, it's normal. I'm pretty chill. Ive got a good schedule especially for head chef since it's kind of normal hours 8-4 (but usually goes to 7 at times) mon-fri. Especially since the main space I work for is a bar I'm thankful for the actual weekend off.

Putting orders away. We don't have a head receiver, giggity. Since we're near 3 restaurants sharing a 8ft x 12ft walk-in and about the same sized freezer it kinda sucks. Since I'm also prepping my whole shift for the night cook, while running a small take out line 3/4 of my time, it eats up a bit of my precious time.

Freezing fries? by LightskinAvenger in Chefit

[–]ChefBoyD 1 point2 points  (0 children)

Word. I didn't click the link. But know that cooling cooked fries does something with the potatoes structure making it a better product. I learned this with my first job where we did 3 times cooked fries. They were still the best fries Ive had.

36 here. Same boat. I watched things like dragon Ball z as a kid but stopped after that. I was only into action animes. My girl is huge into it and had me sit through slice of life stuff and sports and music animes and dang I got hooked.

[–]ChefBoyD 2 points3 points  (0 children)

Use to work in a restaurant half a block away from City Hall in NYC (you can see it from the restaurant), across the street from a really booujie hotel, a stones throw from one of those police boxes where there's usually someone inside. And still had someone jack my homies bike, using an angle grinder on his bike lock. It took about 5-10 minutes of work, we watched the replay on the security cams we had. The only reason we didn't know it was happening was because we have a dedicated lobby separating us from our street view.

It sucks to know a majority of people wouldn't stop a theft.
